Below is a selection of the handmade pasta that we make in our Norwich shop.

Some of the following pastas are available to buy from our online deli shop, however we can make our pasta to order. If you have a requirement that isn’t available to buy directly from our online shop, then please use the form to send us your requirements and we will get back to you with a delivery date and price. Please be aware that there is a minumum order size of 1kg on all our handmade pasta.

Tagliatelle

Originally from Emilia Romagna tagliatelle is the most iconic of fresh pasta shapes, it’s a simple delicious ribbon of egg pasta, the first documented appearance of this delicacy can be found in the mid 16th Century.

Our Tagliatelle are made daily in our Pastificio.

Papparedelle

Typically, from Tuscany, pappardelle is a very wide ribbon of egg pasta. Its name comes from the Tuscan dialect Pappare = to eat with pleasure in generous quantity.

Pappardelle in Italy is mostly eaten with rich meaty sauces specially game.

Our Pappardelle are made to order in our Pastificio.

Spaghetti

Our Spaghetti is made with egg pasta dough using Farina00, Semola, Extra Virgin olive oil and egg yolk.

Spaghetti are originated in Sicily in the twelfth century when Trabia the first pasta factory was found.

Dry spaghetti can come in different thickness. Today in Italy there are thousands of recipes of spaghetti.

Strozzapreti

Strozzapreti: are short twisted cords obtained by hand from pasta of water and Semola. Typically from the Northern Italy, its shape may change slightly from one region to another.

Strozzapreti, Italian for “choke the pries”, there are various tails about the origin of their name but some say that “they are so delicious one could choke”

Tortelloni

Originally from Emilia Romagna, the traditional Tortelloni are parcels of very thin pasta filled with beef and Parmigiano Reggiano. Today there are hundreds of different variations of tortelloni, tortellini o tortelli with the most unexpected fillings.

Our tortelloni are made by hand to order in our pastificio.

Cappelletti

As the vast majority of filled egg pasta has its origin in northern Italy, their shapes resembles the one of a hat from which its name Cappellohat.

Cappelletti are rather small therefore recommended with meaty fillings.

Cappellacci

This is a much larger version of our cappelletti, suits a variety of fillings and colours/flavours.

Our Cappellacci are made by hand to order in our pastificio.

Fagottini

Also known as sacchetti or fiochetti, fagottini are a member of the pasta ripiena (stuffed pasta) family. The edges of a square cut of fresh pasta dough are pulled up and tied off into a bundle with string. This creates a pouch traditionally stuffed with Italian goodness. Fagottini is most associated with Lombardy and Emilia Romagna.

Our fagottini are made by hand to order in our pastificio.

Ravioli

Probably the most famous of fresh filled pastas, across Italy every region, every area or even every town has their own traditional version with thousands of different fillings and variations.

Mezzelune

Mezzelune: is Italian for halfmoon, a semi-circular raviolo very versatile to be stuffed with any type of fillings. Just like Ravioli every area has their own traditional version of these delicious pasta parcels.
